Learned this before I got maced in the face in the military. I use beef stock and add whole cumin when toasting my peppers.

Beef stock helps to enrich the flavor of the meat your putting in the pot, and the toasting the cumin adds that additional layer of flavor. Also, add a pinch of cinnamon. It sounds weird, but you’ll thank me. Half a habanero? Toss it and the jalapeño out and add in a Carolina Reaper instead. Mince it fine and cook it down in the onions. The flavor is phenomenal. Looks delicious but it’s not technically Kevin’s chili since you added different peppers in the beginning. I love how he tried the habanero and decided to only use half, only to take a huge inhale of the spice mix lol hahaha it’s made me laugh.

I have a question. Why would you use chicken stock in the paste and chili, and not beef stock? I would have thought with the beef flavors beef stock would add more flavor. I guess I will have to run an experiment. That chili looks delicious but It’s soo funny to see you cough over 1/2 of a habanero when my daughter and I make salsa or spicy foods we add at least 3 or more to our salsas including jalapeño peppers. I always add 20 or more habanero peppers when I make the Kevin Malone Don’t Get Too Chilly This Christmas Shirt hot sauce.
And to my chili, I always add 3 or more habanero and a few jalapenos because we love spicy food. Thank you for sharing your story with us.
